1. Heat sausage patties according to package directions.
2. Spread mayonnaise and mustard over bottom half of each biscuit. Top with sausage patty, cheese slice, fried egg, arugula and tomato slice. Cap with top half of biscuit.
Tip: For over-easy fried eggs, melt 2 tbsp. butter in nonstick skillet set over medium heat; break eggs into skillet. Cook for about 2 minutes or until egg whites are mostly set around edges; turn over and cook for about 30 seconds for runny eggs or cook until done as desired.
