1. Brush bottom of large, microwavable mug with olive oil. Add eggs, 1 tbsp. water, and salt and pepper. Stir in bacon, spinach and broccoli.
2. Microwave on high for about 1 minute or until omelette is puffed and set but still tender on the inside.
Tip: Use a large mug to avoid eggs from rising up and over the mug.
