- Prepare pancake batter according to directions; stir and set aside.
- Heat griddle to medium and spray with nonstick cooking spray. Warm Smithfield Cooked Bacon until heated through, ladle pancake batter directly onto bacon slices.
- Working in batches, add batter to warmed bacon slices and flip once pancakes begin to bubble, about 2-3 minutes. Flip pancakes and allow to cook 2-3 minutes additional until golden brown. Repeat until all bacon is used, adding more nonstick spray to griddle if necessary.
- Enjoy bacon pancakes with syrup or cool and pop in the freezer for later use.
TIP: Once cooled and frozen, simply pop the bacon pancake into your toaster to re-heat, top with syrup and enjoy!
