1. Preheat oven to 375°F. Whisk together eggs, milk, salt and pepper until blended. Stir in bacon, broccoli and cheese.
2. Divide among 24 mini greased muffin cups. Bake for 12 to 15 minutes or until puffed and set. Let cool for 5 minutes; remove from pan.
3. Make-ahead: Let cool completely. Refrigerate in airtight container for up to 3 days or freeze for up to 2 weeks. Reheat in microwave or serve at room temperature.
Substitute leftover veggies, such as asparagus, zucchini or grilled veggies for broccoli, if desired.
