- Whisk eggs in a small bowl until well combined. Set aside.
- Cook bacon in a skillet over medium heat until well done. Remove from pan and set aside.
- Wipe most of the excess grease from the pan, leaving just enough to cook the eggs, and return to stove top. Add eggs to pan and cook over medium heat for 2-3 minutes until set. Add the grated cheese and a pinch of salt. Cook the eggs a minute longer so cheese melts and eggs are cooked through.
- Meanwhile, toast the pitas lightly until warmed through. Divide the eggs in the 4 halved pitas. Add 2 slices of bacon to each pita and top with sliced avocado.
TIP: Precook your bacon on Sunday to simply heat and eat throughout the week.
