What I Love About a New Year
Happy New Year!! 2011 is here, are you excited? I am!
- using my new Christmas gifts.
- the motivation to make goals. resolutions. brand new plans.
- leaving the Christmas tree up through mid-January.
- the days are getting longer! more daylight = more fun.
- eating healthy again. lots of veggies! (and no more sugar for awhile, please.)
- picking new books to read in the new year.
- switching back to non-Christmas music.. even though I will miss it until next December.
- award shows. the superbowl. new winter tv shows.
- blizzards.. and always a chance for snowdays!
- getting back to my regular bread baking schedule.
- it's the time for making lists! my favorite.
- going back to the gym with gusto. (workouts have even more meaning in January.)
- eating chili (recipe below!) and watching football.
- bundling up on the couch after dinner.
- a fresh start always feels so good!
Mom Judy's Chili (my favorite, and perfect for January.)
- 1 pound ground beef
- 1/2 cup chopped onion
- 2 cloves of garlic, minced
- 1 28-ounce can of baked beans or great northern beans, drained
- 1 15-ounce can tomato sauce
- 1 15-ounce can of water (fill the tomato sauce can)
- 4 T. chili powder or chili seasoning
- 3/4 cup salsa
In a large sauce pan, brown the hamburger with the onion and garlic, adding salt and pepper to taste. Pour in the drained beans, tomato sauce, and water, and stir to combine. Stir in the salsa and chili seasoning. Simmer for 30 minutes or put it in a slow cooker for 1-2 hours on low. Feel free to add more seasoning or water to your desired consistency. Serve with a dollop of sour cream and shredded cheddar cheese. Serves 8-10.
This is the recipe that set me straight. I used to think I didn't like chili, and then I realized that it doesn't have to be all about kidney beans! Now I love it. Could anything be better for curing the January blues?
