Things I Love About Fall

This season is dangerously close to becoming my favorite, for the following reasons...

  1. gray skies & red leaves
  2. cinnamon candles
  3. scarves
  4. cider
  5. burning leaves
  6. football
  7. chili and cornbread
  8. pumpkins on doorsteps
  9. cozy quilts
  10. orchard apples
  11. knitting
  12. sweatshirts and jeans
  13. farmers in the fields
  14. mums
  15. pumpkin spice lattes
  16. the first frost
  17. maple leaves on sidewalks
  18. thick socks
  19. sweet potatoes
  20. and apple crisp with ice cream!

Marian's Apple Crisp (my favorite!)

  • 10-12 apples, thinly sliced
  • 1/2 cup sugar, or 3/4 cup, depending on tartness of apples
  • 2 Tablespoons lemon juice
  • 1/4 cup butter, cubed
  • 2 teaspoons cinnamon
  • Topping:
  • 1 cup flour
  • 1 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup cold butter, cubed
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 Tablespoons oil

Instructions

Arrange sliced apples in a 9 x 13 baking dish, sprinkle sugar and cinnamon over apples. Place cubed 1/4 cup of butter randomly over this, and sprinkle lemon juice on top. Mix it up a little in the pan. Combine all topping ingredients in a small bowl, cutting the butter in last. Place topping evenly over apples. Bake at 350° for 50 to 60 minutes, or until apples are bubbly and crisp looks dark golden and crunchy on top. Serve hot with vanilla ice cream! (This recipe is easily cut in half or fourths for a smaller treat.)
