Our Go-To Weeknight Dinner!

Are You Busy? Me Too!

My husband is back in school at the University of Central Florida (go Knights!) earning his Bachelor's degree in Mechanical Engineering. I am unbelievably proud that he is doing this for his business and for our family. Unfortunately though, many of his classes are in the evening which puts a major crimp in our dinner plans. On nights when he's in school late, I generally feed the kids early and have a small snack with them. Then when the Mister returns, I'll whip up a quick something we can eat together while lounging on the couch and enjoying each other's company.

Most often I will make Ham & Cheese Crescent Rolls, but since Shaina's already told you all about those, I'm going to let you in on our newest favorite: Anything Goes Nachos. These babies are fantastic, and the fun part is they're never the same twice!
QUICK TIP!
The idea is to use whatever you have on hand. Any or all of the listed ingredients would work well, and probably several that I haven't listed. I would love to hear your thoughts for additional ingredients in the comments!

Anything Goes Nachos:


Ingredients:
  • Black beans, canned or previously cooked.
  • Corn, canned or frozen.
  • Jalapenos, canned, jarred or fresh!
  • Green peppers, previously cooked.
  • Tomatoes, fresh diced without seeds or canned and well drained.
  • Scallions, chopped.
  • Tortilla chips.
  • Shredded Cheese
QUICK TIP!
If you decide to use spiral ham or lunch meat, try cutting it in small cubes or strips and browning in a skillet on the stove before adding it to your nacho pile. This will give the meat a yummy crisp bacony flavor!
Directions:
  1. Preheat oven to 400°.
  2. Line a casserole dish or deep glass pie plate with foil (unless you really want to scrub dishes later).
  3. Pile your goodies into the dish, starting with the nachos and ending with the cheese.
  4. Bake for about 25 minutes, then turn the broiler on for 2 minutes (while watching carefully!) to get the cheese all bubbly and perfect.
  5. Serve warm.
QUICK TIP!
Anything Goes Nachos is wonderful on it's own, but even better when served with salsa, sour cream, guacamole and a side of yellow rice!
I adore the Anything Goes Nachos because even when you use healthy ingredients, it still feels like a special treat. And who doesn't love cheesy chips! This is easy to make and can be put together with a great variety of foods. It's simple to whip up in the evening for your special someone or after the kids are home from school and afternoon activities have wound down.
