My Favorite on the Thanksgiving Table

The thing that makes my Thanksgiving plate complete?

You're not going to believe this... it's my mom's corn casserole. Yes! It only comes once a year, and it is my absolute favorite. I'm not sure if the pilgrims would have enjoyed this decadent dish or not, but it sure screams Thanksgiving to me. Every year, I hope and pray that there will be enough corn casserole to have with our leftover turkey sandwiches and cranberry sauce. I'm convinced that it is the perfect side dish to this traditional meal. If your table needs just a little something more this year, please try this super simple side. You'll love it!

Classic Corn Casserole

  • 2/3 cup all-purpose flour
  • 1/2 cup yellow corn meal
  • 2 Tablespoons sugar
  • 1 Tablespoon baking powder
  • 1/4 teaspoon salt
  • 3 eggs, beaten
  • 1/2 cup sour cream
  • 1 can cream style corn
  • 1 can whole kernel corn (do not drain)
  • 1/2 cup (1 stick) butter

Instructions

Preheat oven to 350°. Sift together first 5 ingredients in a large bowl. To the cornmeal mixture, add the beaten eggs, sour cream, and corn. Mix all together and pour into a greased 2-quart casserole dish. Dot with 1 stick of butter. Bake uncovered for 1 hour, or until completely set. Serve with your Thanksgiving turkey and cross your fingers for leftovers!
