You're not going to believe this... it's my mom's corn casserole. Yes! It only comes once a year, and it is my absolute favorite. I'm not sure if the pilgrims would have enjoyed this decadent dish or not, but it sure screams Thanksgiving to me. Every year, I hope and pray that there will be enough corn casserole to have with our leftover turkey sandwiches and cranberry sauce. Classic Corn Casserole
- 2/3 cup all-purpose flour
- 1/2 cup yellow corn meal
- 2 Tablespoons sugar
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 3 eggs, beaten
- 1/2 cup sour cream
- 1 can cream style corn
- 1 can whole kernel corn (do not drain)
- 1/2 cup (1 stick) butter
