The Greatest Go-To Cookies
You should know one thing about me: I am crazy about cookies. If, in the vast world of dessert, there were only cookies, I would be a happy girl. It's true. Over the years, collecting cookie recipes has become a favorite pastime as I search for the perfect cookie. And this recipe... well, it quite possibly fits the bill.
The plain chocolate chip cookie has officially been one-upped. Meet the flourless peanut butter cookie. It is a wonder. You won't even miss the flour. These cookies have chocolate chips, yes, but they also have peanut butter and old fashioned oats.. the perfect cookie trio, if there ever was one!
Not only are these cookies my favorite of all favorites, they are straight-up simple. So fast and so easy! There's not an ounce of extra steps in the recipe. No chopping, no rolling, no chilling. No nonsense. You can pull them together when you're in a pinch, and have ready-to-eat cookies in 15 minutes. That makes them perfect for when a cookie craving hits!
Flourless Peanut Butter Chocolate Chip Cookies
- 1 cup peanut butter
- 1 cup brown sugar
- 2 eggs
- 1/2 cup old fashioned oats
- 1 teaspoon baking soda
- 1/2 cup chocolate chips
Instructions
Preheat oven to 350°. Mix peanut butter and brown sugar in mixer on medium speed until well blended. Add eggs and mix well. Mix in oats and baking soda. Stir in chocolate chips. Dough will be very sticky. Spoon 1-inch balls of dough onto a parchment lined baking sheet. Bake for about 10 minutes. Enjoy hot out of the oven!
